This creamy coconut chicken soup is a hug in a bowl, perfect for a comforting weeknight dinner. Velvety coconut milk blends with tender chicken and aromatic spices, creating a symphony of flavors that's both exotic and deeply satisfying. It's surprisingly simple to make, yet tastes like a gourmet meal.

Instructions

Heat oil in a large pot or Dutch oven over medium heat. Add chicken pieces and cook until lightly browned on all sides, about 5-7 minutes. Remove chicken from the pot and set aside.

Add chopped onion to the pot and cook until softened, about 5 minutes. Add minced garlic and grated ginger, cooking for another minute until fragrant.

Stir in the red bell pepper and red curry paste. Cook for 2-3 minutes, stirring constantly, to toast the spices.
