Craving a quick, satisfying meal that's bursting with flavor? Look no further than these ultimate Chicken & Cheese Quesadillas! Featuring tender, seasoned chicken and a generous helping of melty cheese tucked into crispy, golden tortillas, this dish is a weeknight hero and a guaranteed family favorite. It's comfort food at its finest, ready in minutes!

Instructions

In a medium bowl, combine the cooked, shredded chicken with chili powder, cumin, garlic powder, salt, and pepper. Mix well to coat the chicken evenly.

Heat 1 tablespoon of olive oil or butter in a large non-stick skillet over medium heat. If using, add the diced onion and bell pepper and sauté for 3-5 minutes until softened.

Add the seasoned chicken to the skillet and cook for another 2-3 minutes, stirring occasionally, just to warm through and allow the flavors to meld. Remove the chicken mixture from the skillet and set aside. Wipe the skillet clean if needed.

Place one flour tortilla in the now-empty skillet over medium-low heat. Sprinkle about 1/4 cup of shredded cheese over half of the tortilla.

Spoon about 1/4 to 1/3 cup of the chicken mixture over the cheese. Top the chicken with another 1/4 cup of shredded cheese.

Once the cheese on the bottom half starts to melt and the tortilla begins to warm, fold the empty half of the tortilla over the filling, pressing gently with a spatula.

Cook for 2-3 minutes per side, or until both sides are golden brown and the cheese is fully melted and gooey. Transfer the cooked quesadilla to a cutting board.

Slice into wedges and repeat with the remaining tortillas and filling. Serve immediately and enjoy!
