Dive deep into the heart of Louisiana with this robust and comforting Southern Soulful Chicken & Sausage Gumbo. Crafted with a rich, dark roux and brimming with succulent chicken, spicy Andouille sausage, and the "holy trinity" of vegetables, this stew is a symphony of flavors that will warm you from the inside out. Instructions

**Brown Meats:** In a large Dutch oven or heavy-bottomed pot, heat 1 tablespoon of the oil over medium-high heat. Add the chicken pieces and cook until browned on all sides, about 5-7 minutes. Remove chicken and set aside. Add the sliced Andouille sausage to the pot and cook until browned, about 5-8 minutes. Remove sausage and set aside with the chicken.

**Make the Roux:** Reduce heat to medium. Add the remaining 1/2 cup vegetable oil (or bacon fat) to the pot. Once hot, gradually whisk in the 1/2 cup flour. Cook, stirring constantly, for 20-30 minutes, until the roux reaches a rich, dark chocolate color. This requires patience; do not rush or burn it.

**Sauté Trinity:** Add the chopped onion, celery, and green bell pepper to the roux. Cook, stirring frequently, until vegetables soften, about 8-10 minutes. Add the minced garlic and cook for another minute until fragrant.

**Simmer Gumbo:** Slowly whisk in the chicken broth, a little at a time, to avoid lumps. Stir in the diced tomatoes (if using), sliced okra, bay leaves, dried thyme, Worcestershire sauce, hot sauce, Cajun seasoning, salt, and black pepper.

**Combine & Cook:** Bring the mixture to a boil, then reduce heat to low, cover, and simmer for at least 45 minutes to 1 hour, stirring occasionally, allowing the flavors to meld and the gumbo to thicken.

**Add Meats Back:** Stir the browned chicken and sausage back into the pot and continue to simmer for another 15-20 minutes, or until the chicken is cooked through and tender.

**Adjust & Serve:** Taste and adjust seasonings as needed. Remove bay leaves before serving. Ladle the gumbo generously over warm cooked white rice. Garnish with fresh chopped parsley or green onions and serve with extra hot sauce on the side.
