Ingredients

2 tablespoons beef drippings (from a roast) or unsalted butter

2 tablespoons all-purpose flour

2 cups low-sodium beef broth

1 teaspoon Worcestershire sauce

1/4 teaspoon black pepper

Salt to taste

Optional: 1/4 cup dry red wine for extra depth

Instructions

If using beef drippings, carefully pour them into a heatproof measuring cup. Allow the fat to separate and skim off 2 tablespoons of the fat. Reserve the remaining meat juices for an extra flavor boost later, if desired. If not using drippings, melt 2 tablespoons of unsalted butter in a medium saucepan over medium heat.

Add the all-purpose flour to the fat in the saucepan. Whisk continuously for 1-2 minutes until a smooth paste (roux) forms and turns a light golden brown. This cooks out the raw flour taste.

Gradually whisk in the beef broth, about 1/2 cup at a time, ensuring no lumps form. If using red wine, whisk it in after the first cup of broth has been incorporated.

Bring the gravy to a gentle simmer, continuing to whisk occasionally. Let it simmer for 5-7 minutes, or until it thickens to your desired consistency. It will thicken more as it cools.

Stir in the Worcestershire sauce and black pepper. If you reserved meat juices from a roast, whisk them in now. Taste and add salt as needed, keeping in mind that beef broth can vary in sodium content.
