Instructions

In a large pot or Dutch oven, melt the butter over medium heat. Add the diced onion and cook until softened and translucent, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.

Sprinkle the flour over the cooked onions and garlic. Stir constantly for 1-2 minutes to cook out the raw flour taste, creating a roux.

Gradually whisk in the chicken or vegetable broth, then slowly whisk in the milk until smooth and no lumps remain. Bring the mixture to a gentle simmer, stirring occasionally, until it starts to thicken.
