Tender, seasoned chicken simmered in a smoky chipotle sauce is nestled in warm tortillas, ready for your favorite toppings. Instructions

**Sauté Aromatics:** Heat olive oil in a large skillet or Dutch oven over medium heat. Add diced onion and cook until softened, about 3-5 minutes. Add minced garlic and cook for another minute until fragrant.

**Add Chicken & Seasonings:** Add chicken breasts/thighs to the skillet. Sprinkle with chili powder, cumin, oregano, salt, and pepper. Brown the chicken slightly on all sides, about 2-3 minutes per side.

**Simmer & Shred:** Pour in the diced tomatoes with green chilies (undrained) and chicken broth. Stir in the minced chipotle in adobo sauce. Bring to a simmer, then reduce heat to low, cover, and cook for 15-20 minutes, or until chicken is cooked through and easily shreds with two forks.

**Shred Chicken & Reduce Sauce:** Remove chicken from the skillet and shred using two forks. Return shredded chicken to the skillet. If the sauce is too thin, increase heat to medium-high and simmer uncovered for 5-7 minutes, stirring occasionally, until the sauce thickens to your desired consistency. Taste and adjust seasonings if needed.

**Warm Tortillas & Assemble:** While the sauce reduces, warm your tortillas according to package directions (microwave, oven, or a dry skillet). Fill each warm tortilla with a generous spoonful of the zesty chipotle chicken.

**Garnish & Serve:** Garnish with your favorite toppings such as fresh cilantro, chopped red onion, crumbled queso fresco, a dollop of sour cream, avocado slices, and a squeeze of fresh lime juice. Serve immediately.
